Thai Lentil Burger Recipe (1)

Thai lentil burger is another much loved baked lentil and veggie burger in my family. While I make the other lentil veggie burger with pickled veggie often, this was an experimental lentil burger that ended up being very palatable for each one of us.

Yes, it will be your next favorite homemade veggie burger too. My Thai lentil burger is spicy(not explosively spicy), mildly curry flavored and full of those subtle Thai herb flavors and cooked to perfection. These burgers patties are best enjoyed with soft dinner rolls, on salads, in pita or with flat breads and even on lettuce leaves as a healthier burger.

Choose what best suits your palate and your diet. These soft, mildly spiced patties are juicy too. Thanks to the beet that not only adds the robust red hue but also gives this lentil burger a juiciness too. Even after baking it, these Thai spiced burgers are not dry and chewy.

So, what makes them Thai? Spices, herbs and the curry paste! Thai bird eye chili, fresh Thai basil, galangal, lemon grass and just a tablespoon of red curry paste.

I had red curry paste handy, so I used it. It's totally optional. You can add yellow, green or Massaman too. I would suggest not adding a lot of curry paste, because it may be overpowering for some. The whole idea is to give the raw lentil and veggies mixture a hint of some Thai flavors.

Other than the patty, I added some caramelized onions and jalapeños too. Why? Just to add another dimension of flavor to the burger. Is it optional too? Yes, skip it totally. Still the Thai lentil burger is going to be explosive on your palate.

Variations:

  • Add some mangoes of raw papaya salad on these cute and beautiful patties.
  • Chili lime grilled pineapple works best too on this spicy Thai lentil burger patties.
  • Tangy bean sprout salads with kimchi work very well with these burger patties by adding some crunch and tang.
  • Or use even my version of pickled red cabbage. You will love it! Recipe here.

I have tried each of these and loved each version. If you come up with any other topping idea, share with me. I would love to hear what works best for you.

Thai Lentil Burger Recipe Step-by-step Guide:

Step-1: Process lentils and veggies:

Thai Lentil Burger Recipe (6)
  • Lentils should be pre-soaked.
  • Overnight soaking works wonderfully!

  • If you forget to soak it a night before, soak it it hot water for at least two hours and it still works fine.
  • Take the soaked lentils in a processor.
  • Add cilantro, red onions, serrano pepper and process until the ingredients arewell combined.
  • Don't make the mixture fine. The lentil+veggie mixture should look grainy.

Step-3: Add Beet and Thai Herbs:

  • Now add the beet slices, herbs and minced herbs(galangal+lemongrass+kefir lime if using).
  • I prefer to mince the herbs separately so that they release their flavor while getting processed again with lentils.

After processing it for a few minutes, the mixture will look like this.(grainy and well-combined)

Notes

  • Lentil patties may dry out if you cook them for a long.
  • You can store half cooked patties or cooked patties in refrigerator and even freeze them for a month.
  • These patties can be grilled too. If you choose to grill, consider adding ½ cup of breadcrumbs to make these more firm.
  • Add some sriracha, soy sauce and kefir lime leaves for a robust Thai flavor.

FAQs

Why do my lentil burgers fall apart? ›

Not using a binder to hold the ingredients together.

A good veggie burger isn't just, well, veggies — it needs a binder, something to hold all the ingredients together and keep the burger intact. Without a binder, your burger might completely crumble and fall apart the second it hits the grill or when you bite into it.

What is a lentil burger made of? ›

Place the ingredients into a canister: Add the drained lentils, garlic, shallot, carrot, tomato paste, cilantro, salt, and black pepper to a food processor. Shape the patties: Scoop out ¼ cup of the mixture at a time. Option 1 Bake: Bake the patties for 10 minutes.

Can red lentils be substituted for green lentils? ›

Red and green lentils are very different and don't make good substitutes for each other. Green lentils have thick skins and hold their shape when cooked. Red lentils are hulled with the skins removed and tend to become soft and mushy.

How do you bind a veggie burger? ›

If you want a veggie burger that holds together, use binding agents like cooked grains (rice, quinoa, millet), eggs, flax eggs, bread crumbs, oats, flour or nut/seed flours like almond flour. The amount of grains or flour will depend on the recipe, but it's usually anywhere from ¼ to 1 cup.

What is a good binding agent for vegan burgers? ›

Common binding agents include flax eggs (a mixture of ground flaxseed and water), chia seeds, mashed potatoes, tapioca flour, or even your favorite nut butter. These ingredients help hold everything together and prevent your burger from crumbling.

Why are my lentil patties mushy? ›

Just make sure not to overcook them; we want them tender but still holding their shape, otherwise your lentil burgers might turn out mushy.

Are lentils healthier than beef? ›

Pound for pound, raw lentils have more protein than steak. While not as protein-dense once cooked, they pack even more iron than meat, in addition to other vitamins and minerals. Fast to cook, easy to store and exalted enough to be buried with the pharaohs of ancient Egypt, these seeds have sustained empires.

Is lentil or chickpea healthier? ›

Since lentils have more fiber, lentils win this round. Lentils contain more protein than Chickpeas. Both chickpeas and lentils are great sources of vegetable protein. However, since lentils have more of this healthy nutrient, lentils win this round.

Is lentil a protein or vegetable? ›

Which color lentil is healthiest? ›

Black Lentils (Beluga lentils)

Thanks to the robust flavor, these lentils pair well with meaty veggies and marinated proteins like mushrooms, tofu, and seitan. Best of all, black lentils are the most nutritious variety of lentils, boasting the highest amount of protein, plus high levels of calcium, potassium, and iron.

What are the tastiest lentils? ›

Black Beluga lentils have the most flavor, adding a rich, earthy taste and a firm texture that holds up well during cooking. Black lentils will be ready in 20–25 minutes; however, they will fall apart like their brown, green, and red partners once you cook them for too long.

How do you add flavor to a veggie burger? ›

We recommend simply shaping the beef into a vague burger shape with the least amount handling as possible. Or if you'd rather work smarter than harder, use a stuffed burger press like the Big Boy Burger Binder, which shapes the perfect burger every time. Go easy on the flipping too.

Do lentils fall apart when cooked? ›

Red and Yellow Lentils

Good For: Because of their “split” nature, this variety of lentil tends to disintegrate when cooked, making them ideal to use in soups or stews (especially as a thickener), and in casseroles or any other dish where they are pureed.

Why do my homemade burgers fall apart? ›

Try to work as efficiently as possible and avoid squeezing too hard, since overworking the beef is a big reason why burgers fall apart. If you don't want to grill them right away, however, throw them in the fridge while you wait – colder burgers are less likely to break down when you cook them.
